Tis the Season For Eating

When I was pregnant the first time, I was working full time.  I’d always been good about bringing my lunch to work so as to a) not spend money eating out and b) not eating crap  for lunch.  However, there wasn’t a candy jar that was safe from my paws or a piece of birthday cake that I was going to pass up for the entire 40 weeks.  This time, I’m not working and there isn’t cake at every turn or a candy jar on my neighbors front step.  This has definitely helped me keep my eating to some of the more healthy choices.  Usually.

What I am LOVING about this time of year are the fresh fruits and vegetables.   I’m fortunate to live in Atlanta, a city that has local farmers markets several times a week.  I’ve been hitting the farmers market twice a week and generally putting us into the poor house.  It’s all worth it to me though when I sink my teeth into a juicy, ripe tomato that was locally grown and is fresh from the vine.  Or the blueberries that I’ve been eating straight from the carton because they are so incredibly delicious and I just can’t stop.

I’ve also been spending more time this go round cooking healthier meals.  I’ve been scouring some of the weight loss/healthy cooking/eating light blogs and finding some great recipes.  I think that food tastes better when it’s not loaded down with creams, butters and oils and the ingredients are super fresh.  I’ve been making gazpacho by the gallons, fresh pestos that I can freeze and eat later, lots and lots of different squash recipes and even some fried okra (which I know isn’t that healthy but it’s the only way I can eat okra).  I’ve really been craving the vegetables and am definitely listening to that craving, especially this time of year.

Of course, all that being said, that didn’t stop me from having my husband go to the store the other day for a pint of chocolate peanut butter ice cream.  I’ve enjoyed some of that ice cream here and there but the rest of it’s going in the trash because if it’s not here, I just can’t eat it.

    Have you tried roasting or grilling okra? I managed to convert my Yankee husband into an okra fan with roasted or grilled okra!

    I have been eating a lot of processed quick meals- like Stouffer’s but I also eat a lot of oatmeal and non sugary cereals too.

    Right now I am in love with tuna salad with a little mayo, hot sauce, s&p and some ol bay seasoning.

    I LOVE fresh fruit and veggies! I also really enjoy being able to get outside more to grill chicken/fish/etc, it just tastes so much better than just cooked on the foreman grill or in a pan…
